Spinach is not only mildly aromatic, but also healthy: it contains significant amounts of vitamins A, C, folic acid, potassium, calcium and magnesium. The iron content has been overestimated for a long time, but it is still impressive at a good 4 milligrams per 100 grams.

Baby spinach (or young spinach) is harvested at an earlier time. This makes the leaves smaller and particularly tender. The fine leaves of spring and summer spinach are also ideal for pesto or raw consumption!

Preparation steps

1.

Rinse and dry the spinach. Add some of the leaves with a large pinch of salt to a mortar, then grind into a paste. Add the remaining leaves, and grind thoroughly.

Add the pine nuts, and grind until coarse but still visible. Stir in the parmesan, garlic, and olive oil.
