150 grams shelled Tamarind
¼ tsp Chili powder
½ tsp ground Cumin
1 Tbsp lemon juice
3 Tbsps brown sugar

Preparation steps

1.

Break the tamarind into small pieces, place in a small saucepan, cover with 375 ml of water and simmer for about 15 minutes. 

2.

Strain the mixture through a fine mesh sieve, stir in the chili powder, ground cumin, lemon juice and sugar. Season to taste with salt and store in the refrigerator until ready to serve. The sauce is a great accompaniment to chicken, beef and pork.
