- 4 ripe Quince (peeled and quartered)
- ⅜ cup Apple juice
- 1 Tbsp lemon juice
- 2 Cinnamon stick (broken)
- 4 bay leaves
- 1 unwaxed lemon (zest grated)
- 1 Vanilla bean (split)
- 4 Tbsps honey
- To serve
- Crème fraiche
Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2. Butter a baking dish

Put the quinces in the baking dish and pour over the apple juice and lemon juice.
3.
Add the cinnamon sticks, bay leaves, lemon zest and vanilla pod. Drizzle the honey over the quince.
4.
Cover and bake for 2- 2 1/2 hours, turning the quince after 1 hour, until sticky and soft.
5.
Serve warm or at room temperature with creme fraiche.
