Ingredients

For the soup
1 onion
1 garlic clove
150 grams Celery root
1 carrot
2 Tbsps olive oil
1 Tbsp Tomato paste
600 milliliters Vegetable broth
600 grams Tomatoes
1 stem Basil
100 milliliters Whipped cream
Sea salt
1 pinch sugar
For garnish
4 hardboiled eggs
4 black Olives (pitted)
50 milliliters Whipped cream

Preparation steps

For the soup, peel onion, garlic, celery and carrot and dice finely. Sauté all for 2-3 minutes in hot olive oil, stir in tomato paste and deglaze with broth. Rinse tomatoes, cut out stalks and coarsely chop. Add tomatoes and basil and gently simmer for about 30 minutes. Puree soup with an immersion blender and pass through a sieve. Add cream, bring to a boil and depending on desired consistency, either add a little broth or slightly simmer. Season with sea salt and sugar.

Pour into bowls and use garnish ingredients to create faces. Use egg halves and olives as eyes and use cream to draw a smile. Serve.
