1 ¾ cups all-purpose flour

Preparation steps

1.
In a bowl, beat the butter with the sugar and a pinch of salt until fluffy. Add the sieved flour and rice flour and knead thoroughly on a floured work surface to form a smooth dough.

Line a baking tray with grease-proof paper. Roll the dough out to approximately 1 cm thick and cut into shortbread fingers (approx. 3x10 cm). Prick each finger a few times with a fork, sprinkle with sugar and place on the baking tray. Chill for around 30 minutes.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
4.
Bake the shortbread for 15-20 minutes until golden. Carefully remove from the tray and leave to cool on a wire rack.
