1 ⅛ cups butter
1 ⅔ cups self-rising flour
1 ¼ cups Almond flour
½ cup sugar
2.333 cups Gooseberry
0.333 cup caster sugar
½ cup sliced almonds
To decorate
2 Tbsps chopped almonds
pink Gooseberry
powdered sugar

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 27cm x 18cm|11" x 7" baking tin and line the base with non-stick baking paper.
2.
Rub the butter into the flour, almonds and sugar in a mixing bowl.
3.
Firmly press 2/3 onto the base and sides of the tin.
4.
Toss the gooseberries with the caster sugar, then scatter over the top.
5.
Mix the flaked almonds into the remaining crumbs, then scatter over the gooseberries. Bake for 50-60 minutes until golden. Cool in the tin.
6.
Sprinkle with chopped almonds and gooseberries and sift icing sugar over the top.
