Preparation steps

Preheat the oven to 200 ° C convection.

Rinse sea bass and pat dry. Cut lemon into slices. Season fish inside with pepper and stuff with lemon slices and thyme.
3.
Whisk egg whites, add salt and water to make spreadable mixture. Place half of salt into a baking dish and top with fish. Spread remaining salt onto fish and press firmly. Bake fish in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from oven and break salt crust. Take out fish and transfer to a plate. Serve.
