1 cup unsalted butter (scant)
½ cup superfine caster sugar
2 large egg yolks
2 tsps vanilla extract
2.333 cups gluten-free all purpose flour (plus extra for dusting)
2 tsps xanthan gum (if not included in the flour)
1 cup Milk chocolate (30% cocoa solids, melted)
1 cup plain Dark chocolate (70% cocoa solids, melted)
1 cup white chocolate (melted)

Preparation steps

Preheat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Beat the butter until soft. Add the sugar and beat until smooth, then beat in the egg yolks and vanilla.

Gradually add the flour and mix to a stiff dough. Flatten the dough into a disc, wrap in cling film and chill for 1 hour.

Roll out the dough on a lightly floured surface, about 5mm|1/4" thick.

Using a 5cm|2" heart-shaped cutter cut hearts from the dough, re-rolling the trimmings Place about 2.5cm|1" apart on the baking trays.

Bake for 18-20 minutes, until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
Dip 1 half of some of the biscuits into the milk chocolate and place on a wire rack to set. Repeat with the remaining biscuits and the plain chocolate.
8.
Drizzle the white chocolate over the set chocolate on the biscuits and leave to set.
