2 ½ ozs dairy-free Biscuit (crushed to crumbs)
16 ozs dark dairy-free chocolate (70% cocoa solids)
5 Tbsps liquid Glucose
2 Tbsps Rum (or brandy)
1 cup Soy cream
To decorate
cocoa powder
To serve
dairy-free Ice cream

Preparation steps

1.
Grease a 23cm|9" cake tin and line the base with non-stick baking paper.
2.
Press the crushed biscuits into the base of the tin.
3.
Melt the chocolate, glucose and rum in a bowl placed over a pan of simmering (not boiling) water.
4.
Remove from the heat and gently stir in the soya cream.
5.
Pour into the tin and chill overnight.
6.
Turn out onto a large plate and sift cocoa powder over the top. Serve with dairy free ice cream.
