2 kilograms fresh mussels
1 organic lemon (Juiced and zested)
100 milliliters white wine
100 milliliters fish stock
500 grams cooked Rice
1 Avocado
Wasabi
salt
1 cup Crème fraiche
parsley (for garnishing)

Preparation steps

1.

Rinse mussels thoroughly and remove all beards.

Combine white wine, lemon juice, zest and fish stock, bring to  a boil. Add mussels and simmer, covered, for about 6-8 minutes or until mussels are tender. Remove mussels from broth (discard all unoponed ones) and separate meat, chop coarsely. (set 4 mussels aside for garnishing). 

3.

Peel avocado, halve and pit, dice. Combine with creme fraiche and part of chopped mussels, season with salt and wasabi. Combine mussels with rice and dressing, arrange in bowls. Garnish with whole mussels and sprinkle with parsley. Serve.
