1 bunch Chives
2 eggs
2 Tbsps olive oil
2 Tbsps White vinegar
100 milliliters milk
70 grams Parmesan
1 Parsnip
salt
peppers (freshly ground)
1 Radicchio
1 Romaine lettuce
500 milliliters vegetable oil (for frying)

Preparation steps

1.

For the cream cheese: Rinse the chives and cut into small rings. In a small saucepan, heat the eggs with the olive oil, vinegar, and milk. Stir constantly until creamy, but do not let it boil. Remove the pan from heat and stir in the Parmesan. Stir until melted.

Stir half of the chives into the cheese sauce and season with pepper. 

Peel the parsnip and slice into thin slices. Heat the oil and cook until golden brown, about 1-2 minutes on each side. Drain on paper towels and season with salt and pepper.

Rinse the radicchio and lettuce and spin dry. Transfer to plates. Heat the dressing slightly and drizzle over the salads. Sprinkle with the chives and parsnip. Serve sprinkled with grated Parmesan.
