Preparation steps

Toast the coariander in a dry pan until fragrant. Remove from the pan, and finely crush in a mortar. Rinse and quarter the quince. Remove the core and finely dice. Process through a juicer, then measure 700 ml (approximately 24 ounces) of juice.

Rinse and dry the organic orange, then finely grate the zest. Squeeze the juice from the remaining oranges, and measure out 300 ml (approximately 10 ounces) of juice. Add the juice and the zest to a saucepan and heat to 50°C (approximately 125°F). Stir in the sugar, coriander, and pectin. Bring to a boil, stirring often, and cook for 4 minutes until the jam begins to thicken. Fill the prepared jars to the brim with the jam. Seal tightly, turn upside down, and cool completely.
