12 vanilla wafer cookie
2 cups cream cheese (softened)
½ cup granulated sugar
¼ cup heavy cream
1 tsp pure vanilla extract
2 fresh eggs
For Topping
1 ¾ cups fresh Raspberries
1 ¾ cups sliced, fresh Strawberries
3 Tbsps sugar
3 Tbsps water
In Addition
1 mini Springform pan (with removable bottom for cheesecakes)

Preparation steps

Preheat oven to 325º F / 160º C.

Place a vanilla wafer in each cup.

In a medium bowl, beat the cream cheese and sugar until smooth. Add cream, vanilla and eggs; mix well. Spoon the batter on top of each vanilla wafer.

Bake for 18 to 20 minutes, or until just set. Remove pan from oven and let cool for about 30 minutes. Carefully run a knife around the edges of the cheesecake and push the bottoms up to release the cakes. Transfer the cheesecakes to a serving platter and chill in the refrigerator.

For Topping:

Place 1/3 of the fruit in a medium saucepan. Add the sugar and water and bring to a boil. Pureè and strain through a mesh sieve. Allow sauce to cool and thicken.

Prior to serving top with fresh fruit and drizzle with sauce. Serve.
