¾ cup Raspberry jam
½ cup butter
0.333 cup caster sugar
1 tsp vanilla extract
1 egg (beaten)
1 Tbsp milk
¾ cup self-rising flour
To serve

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 4 x 125ml|4 fl oz pudding basins and spread the jam over the bases.
2.
Beat the butter and sugar in a mixing bowl until light, then beat in the vanilla and egg until smooth.
3.
Stir in the milk and flour and mix well until blended.
4.
Spoon into the basins and smooth the tops. Bake for about 20 minutes, until a skewer or wooden cocktail stick inserted in thecentre of the puddings comes out clean.
5.
Turn out onto warm serving plates and serve with custard.
