1 ½ cups red chili peppers (cultivar depends on the desired level of spiciness, deseeded)
cup olive oil
1 unwaxed lemon (juiced, zest grated)
¾ inch fresh ginger (peeled and finely chopped)
2 garlic cloves (finely chopped)
1 tsp ground paprika
1 tsp salt

Preparation steps

1.
Place the chillies in a blender with 4-5 tbsp oil and blend well.
2.
Add the lemon juice and zest, ginger, garlic, paprika and salt and mix well.
3.
Pour into a sterilised jar and add the remaining oil so that everything is covered.
