40 grams peeled almonds
2 handfuls parsley (approximately 50 grams)
4 garlic cloves
Sea salt
40 grams freshly grated Parmesan
120 milliliters olive oil

Preparation steps

1.

Roast the almonds in a dry pan. Remove and let cool.

2.

Rinse the parsley, shake dry and pluck off the leaves. Peel the garlic cloves. Grind the garlic, salt and almonds in a mortar.

3.

Grate the parsley and add to the mortar with the finely grated parmesan. Grind well. Gradually incorporate the oil, until the pesto is thick. Season with salt and serve.
