1 cup butter
1 cup light brown sugar
½ cup caster sugar
1 tsp vanilla extract
2 eggs
1 ¾ cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 pinch salt
2 ½ cups rolled oats
1 cup raisins

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Beat together the butter, brown sugar, caster sugar and vanilla in a mixing bowl until smooth. Beat in the eggs until blended.
3.
Sift in the flour, baking soda, cinnamon and salt and mix well.
4.
Stir in the oats and raisins until combined.
5.
Place large heaped teaspoons of the mixture onto the baking trays, spacing them well apart.
6.
Bake for 10-15 minutes until golden. Cool on the baking trays for 15 minutes, then place on a wire rack to cool completely.
