400 grams button Mushroom
2 Tbsps butter
salt

¾ l Vegetable broth (instant or homemade)
3 garlic cloves
100 grams Crème fraiche
ground allspice
1 tsp lemon juice
1 Tbsp finely chopped parsley

Preparation steps

1.

Clean mushrooms and wipe with paper towels, then cut into slices. Sauté approximately 1/4 of the mushrooms until brown in a pan with 1/2 tablespoon butter. Season with salt and pepper and set aside for garnish. Peel garlic and chop coarsely.

Add remaining mushrooms to the saucepan with the rest of the butter and sauté briefly. Add garlic and broth, cover and simmer for 20 minutes, then puree with an immersion blender. Gradually stir in creme fraiche.

Season to taste with salt, pepper, a little allspice and lemon juice. Serve garnished with the reserved mushrooms and parsley.
