- 3 eggs (beaten)
- ½ cup Mushrooms cleaned and sliced (chanterelle, cremini, baby bella)
- ¼ cup cooked ham (sliced into bite-size strips)
- 1 scallion (green onion)
- non-stick cooking spray
- salt (to taste)
- freshly ground Black pepper (to taste)
- ¼ cup Cheddar cheese (grated)
Preparation steps
1.
In a medium bowl, combine eggs, mushrooms, ham, green onion.

Heat omelet pan or frying pan with cooking spray.
3.
Add egg mixture to hot pan and season to taste with salt and pepper. Cook until almost set. Flip over and when egg is set, add cheese. Cook until cheese is melted.
4.
Garnish with chopped green onion and serve.
