- ¼ cup butter
- 1 onion (finely chopped)
- 4 cups Porcini mushroom (sliced)
- 3 cups Meat stock
- 1 Porcini mushroom (sliced)
- 2 cups milk
- 2 egg yolks
- 1 Tbsp Crème fraiche
- Nutmeg
- 1 bunch parsley (finely chopped)
Preparation steps
1.
Heat the butter in a pot and fry the onion. Add the mushrooms and fry for 10 minutes. Deglaze with the stock. Cook for 3 minutes, leave to cool slightly and then puree.

Add the remaining mushroom and the milk to the soup and cook on a low heat for 15 minutes. Remove the pot from the heat and stir in the egg yolks and the creme fraiche.
3.
Season with salt, nutmeg and parsley.
