1 Zucchini (sliced)
1 small yellow squash (sliced)
2 red Bell pepper (sliced)
1 Eggplant (sliced)
salt

3 Tbsps olive oil
2 Tbsps lemon juice
4 Tbsps balsamic vinegar
8 toasted Bread (rounds)
4 slices Scamorza
4 large Basil

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray
2.
Place the sliced vegetables on the baking tray and sprinkle with salt and pepper and 1 tablespoon oil. Cook for 20 minutes. Remove from the oven and drizzle with with 2 tablespoons oil and the lemon juice and leave to stand for at least 1 hour.
3.
Sprinkle half the balsamic vinegar over the vegetables. Layer the courgettes, squash and peppers, toasted bread and cheese. Top with a basil leaf and an aubergine slice.
4.
Drizzle the remaining balsamic vinegar over the top.
