- 4 Tbsps olive oil
- 2 cloves garlic cloves (finely chopped)
- 1 small, dried Chili (crushed in a mortar)
- ⅔ cup vegetable stock
- 1 unwaxed Lime (zest and juice)
- 1 tsp sliced Chives
- 1 tsp Dill
- 1 tsp freshly chopped mint
- 4 cups Prawn peeled (apart from the tail) and deveined
- sliced Limes (to garnish)
Preparation steps

Heat the barbecue.

Heat the oil in a pan and fry the garlic and chilli. Deglaze with the stock and stir in the lime zest and juice. Remove from the heat and leave to cool.
3.
Stir in the herbs and season to taste with salt and ground black pepper.
4.
Thread the prawns onto skewers and grill on the hot barbecue for around 5 minutes.
5.
Arrange the skewers on plates with slices of lime and serve drizzled with the sauce.
