8 fresh Sardine (filleted and pin boned)
2 large Red pepper (seeded and cut into strips)
2 large onions (sliced)
3 ½ cups Cider vinegar
¾ cup Lime juice
salt
peppers
small bunch of thyme

Preparation steps

1.
Preheat the oven to 170°C (150°C fan) | 325F | gas 3.
2.
Place four 8 oz jam jars with lids attached in the oven to sterilise. Remove after 10 minutes and set to one side.
3.
Combine the vinegar and lime juice in a measuring jug.
4.
Divide the sardine fillets, peppers and onions between the jars. Season and add a thyme sprig to each.
5.
Cover with the vinegar and lime juice mixture, then pour evenly on top of the sardines.
6.
Seal and let the jars cool to room temperature before chilling.
7.
Leave to marinate in the fridge overnight before serving with extra sprigs of thyme as a garnish.
