- 1 cup self-rising flour (sifted)
- 2 eggs
- ⅜ cup milk
- 2 Tbsps superfine caster sugar
- 2 Tbsps chopped Pecan
- 3 canned Peaches (halves in syrup)
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease 6 muffin tins.
2.
Whisk together the flour, eggs, milk and sugar in a mixing bowl until smooth.
3.
Stir in the pecans and peaches.
4.
Spoon into the tins and bake for 15-20 minutes until golden. Place on a wire rack to cool completely.
