500 grams honeydew melon (flesh)

Preparation steps

1.

Combine the sugar and 100 ml (approximately 1/2 cup) of water in a saucepan and boil for about 1 minute. Remove from heat and let cool. Cut the honeydew flesh into cubes and puree in a blender or food processor until smooth. Mix the puree with the sugar syrup and transfer to a shallow, metal container.

Freeze the mixture for about 4 hours, stirring with a fork about every 30 minutes to prevent large ice crystals from forming. Scoop into chilled glasses and garnish with honeydew wedges.
