¼ cup kalamata Olives (drained; pitted and roughly chopped)
1 freshly ground Black pepper (to taste)
2 ripe Tomatoes (rinsed; trimmed and chopped)
1 Cucumber (peeled; seeds removed and chopped)
½ cup Baby spinach (shredded)
1 cup Feta (crumbled)
2 Tbsps olive oil
1 Tbsp fresh lemon juice
salt (to taste)
freshly ground Black pepper (to taste)
4 Flour tortillas (10-inch)

Preparation steps

1.
In a large bowl, combine olives, red pepper, tomatoes, cucumber, spinach and feta cheese.
2.
In a small bowl, whisk olive oil and lemon juice together. Season with salt and pepper and drizzle over salad mixture, tossing to incorporate.
3.
Spoon salad onto the tortillas and roll, folding the two ends toward the center. Cut each wrap in half and transfer wraps to individual plates, seam side down and serve.
