3 ½ cups dried Elbow macaroni
salt (to taste)
2 ½ cups Smoked ham (sliced into thin strips)
15 ozs canned Diced tomatoes (drained)
1 cup crumbled Feta
1 cup grated Gruyere
2 tsps dried thyme
5 ozs Baby spinach (finely chopped)
freshly ground Black pepper (to taste)
1 cup half and half cream

Preparation steps

1.
Preheat oven to 375º F. Grease a 9 x 13 glass casserole dish with nonstick cooking spray.

In a pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain well and return to pot.

Gently combine pasta, ham, tomatoes, feta, Gruyere, thyme, and spinach. Season to taste with salt and pepper. Transfer to prepared casserole dish. Pour half and half over pasta mixture. Cover with aluminum foil and bake for 15 minutes. Remove foil, stir well and continue baking for an additional 30 to 40 minutes, or until heated through and bubbly.

Divide among plates and serve.
