Preparation steps

Peel the oranges with a sharp knife, making sure to remove all of the bitter white pith. Remove the whol fruit segments, making sure to reserve any juice created in a bowl. Squeeze the juice from the remaining orange membrane. Peel and thinly slice the cucumber. Peel and julienne the onion.

Rinse and trim the endive. Tear into bite-sized pieces, if necessary.

Mix the olive oil with the vinegar and 1-2 tablespoons of orange juice. Season to taste with salt and pepper, then mix with the cucumber, endive, parsley, and the onion. Transfer to plates, top with the whole orange segments, and serve.
