12 medium eggs
1.333 cups Bayonne ham (or equivalent)
2 espelette pepper (seeded and sliced)
4 Chocolate stick (peeled and sliced)
salt

Preparation steps

1.
Whisk together the eggs in a large mixing bowl with salt and pepper.
2.
Heat a knob of butter in an omelette pan set over a medium-high heat until it stops foaming. Add a quarter of the egg mixture and tilt the pan immediately to cover the base.
3.
Push and tilt the set omelette so that all of the egg is cooked. Remove from the heat and top with a quarter of the ham, celery and peppers.
4.
Season again before rolling up.
5.
Repeat for the remaining egg and ingredients so you have 4 omelettes. Serve immediately.
