2 Tbsps olive oil
1 onion (chopped)
1 clove garlic cloves (crushed)
8 ozs Zucchini (chopped)
6 ozs Eggplant (chopped)
14 ozs canned Tomatoes
1 Tbsp sun-dried tomato paste
½ cup Long grain rice

Preparation steps

1.
Heat the oil in a large skillet (frying pan). Add the onion and cook gently for 5 minutes to soften but not colour.
2.
Add the garlic and courgettes and aubergines and fry for a few minutes.
3.
Stir in the tomatoes and sun-dried tomato paste, cover and simmer for 20 minutes until the vegetables are tender.
4.
Meanwhile, put the rice into a pan with 225ml /1 cup cold salted water. Cover and bring to the boil, then simmer for 15 minutes until the rice is tender and the liquid absorbed.
