6 Tomatoes
¼ cup olive oil
2 onions (chopped)
4 cloves garlic cloves (crushed)
2 green peppers (chopped)
cup white wine
2 bay leaves
1 chili pepper (finely chopped - or more to taste)
3 lbs White fish (of your choice)
32 ozs Shellfish (of your choice)

Preparation steps

1.

Heat the oven to 190°C / 375°F.

Put the tomatoes into a pan of boiling water for a few seconds, refresh in cold water, then skin and roughly dice.

Heat 2 tablespoons oil in an ovenproof casserole dish and cook the onions and garlic until translucent. Add the tomatoes and peppers and cook briefly.

Stir in the white wine, add the bay leaves and chilli and simmer for 10 minutes.

Place the fish and shellfish on top of the vegetables. Season with salt and pepper and drizzle with the remaining oil.

Cover and cook in the oven for 20-30 minutes, until the fish is cooked. Taste and if needed add more salt and pepper.
