2 Tbsps unsalted butter
4 cups cooked short grain rice
1 ½ cups 2% milk
1 ½ cups Evaporated milk
½ tsp vanilla extract
0.333 cup golden caster sugar
cup Dark chocolate (chopped)

Preparation steps

Melt the butter in a large saucepan set over a medium heat until hot.

Add the rice and sugar, stirring well. Cover with the milk, evaporated milk, and vanilla extract. Stir well, cover with a lid, and cook for 5 minutes or until the sugar has dissolved and the pudding is creamy.
3.
Remove the lid and stir in a quarter of the chocolate. Continue to cook, over a low heat, for a further 5 minutes until the chocolate has been incorporated.
4.
Spoon into bowls and top with the remaining chocolate before sering
