2 Broccoli (prepared into florets)
0.333 cup butter (softened)
4 large, skinless Chicken breasts
2 cups golden breadcrumbs
Tomatoes (to serve)

Preparation steps

1.
Cook the broccoli florets in boiling salted water until tender, 8-10 minutes.

Drain well and blend half in a mixer or food processor with the butter. Spoon the broccoli purée into a mixing bowl.
3.
Add the breadcrumbs and mix well, seasoning with salt and pepper.
4.
Steam the chicken breasts for 25 minutes over a half-filled saucepan. Remove, pat dry, and season with salt and pepper.
5.
Place the chicken breasts on a baking tray covered in aluminium foil. Spread the broccoli mixture over them and grill for around 6-8 minutes until golden and crisp.
6.
Serve straight from the oven with the remaining cooked broccoli and some sun-dried tomatoes.
