- 2 Avocados (peeled, roughly chopped)
- 7 ozs ripe Tomatoes (chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 small onion (chopped)
- 2 red chili peppers (seeds removed, finely chopped)
- 1 Lime (juice)
- 4 Tbsps extra virgin olive oil
- 2 Tbsps toasted Pine nuts
- To serve
- Cracker
Preparation steps
1.
Mix all the ingredients together, except for the pine nuts. Leave to stand for 15 minutes.
2.
Put into serving dishes and sprinkle with pine nuts. Serve immediately with crackers.
