1 Cucumber
1 onion
1 tsp olive oil
2 tsps sugar
400 milliliters Vegetable broth
Tabasco sauce
2 tsps lemon juice
salt
freshly ground peppers
100 grams Yogurt (0.1% fat)
mint

Preparation steps

1.

Peel the cucumbers, cut in half lengthwise, scoop out the seeds and slice thinly. 

2.

Peel and dice the onion. Heat the olive oil in a large pot and sauté the onion until translucent. Add the cucumber to the pan, sprinkle with sugar and continue cooking until slightly caramelized.

Stir in the vegetable broth, bring to a boil, remove from heat and puree until smooth. Allow to cool completely, then stir in the lemon juice and season with Tabasco, salt and pepper to taste. Refrigerate until well chilled. 

4.

To serve, ladle the cold soup into bowls, swirl a bit of yogurt into each bowl, garnish with fresh mint and serve with baguette slices.
