Ingredients

For the chapatis
2 cups flour
1 Tbsp Ghee
For the cucumber and mint raita
1 ¾ cups natural Yogurt
½ tsp salt
¼ tsp cayenne pepper
1 pc Cucumber (approx. 10 cm), peeled and grated
2 Tbsps finely chopped mint
mint (to garnish)

Preparation steps

For the chapatis put the flour into a bowl and gradually knead in 150 ml lukewarm water. Transfer the dough to a lightly floured work surface and continue to knead for about 10 minutes until soft. Then wrap in foil or clingfilm and leave to rest for 1 hour. Form the dough into a roll and divide into 12 portions. On a lightly floured work surface roll out each portion to a circle approximately 15 cm in diameter. Rub a frying pan with ghee and cook each chapati on both sides over a medium heat until small brown flecks appear.

For the raita stir the yoghurt until smooth, then stir in the salt and cayenne pepper. Fold in the cucumber and mint. Spoon into small bowls and garnish with mint.
