7 ozs Spaghetti
4 rashers Bacon (or pancetta)
2 cloves garlic cloves (finely chopped)
½ bunch parsley (finely chopped)
2 eggs
1 egg yolk
3 Tbsps Parmesan (grated)
olive oil
salt

Preparation steps

1.
Cook the pasta in boiling salted water according to packet instructions.
2.
Cook the bacon in a little oil until golden.
3.
Mix together the garlic, parsley, eggs and Parmesan, then stir in the bacon.
4.
Drain the pasta and leave to cool, then roughly chop into shorter lengths.
5.
Heat 2 tbsp oil in a pan (the bacon one for preference) and then spoon dollops of the spaghetti mixture into the pan.
6.
Fry until golden and crisp on both sides. Serve hot.
