1 Tbsp vegetable oil (for greasing)
1 ¾ cups all-purpose flour (sifted)
cup caster sugar
2 tsps Baking powder
salt
2 medium eggs (separated)
1 cup Whole milk
¾ cup unsalted butter (melted)
1 tsp vanilla extract
8 rashers fatty Bacon
cup Maple syrup (to serve)
Raspberries (to garnish)

Preparation steps

1.
Preheat a waffle iron according to the manufacturer’s instructions. Grease with vegetable oil.
2.
Combine the flour, sugar, baking powder, and salt in a large mixing bowl and stir briefly.
3.
In a separate bowl, beat the egg yolks, and then beat in the milk, butter, and vanilla extract.
4.
Beat the egg whites in another bowl until stiffly peaked and fold into the batter.
5.
Spoon into the preheated waffle iron and cook in batches, according to the manufacturer’s instructions, until golden-brown.
6.
Remove from the iron and leave to cool slightly. Preheat the grill to hot.
7.
Cook the bacon for 2 minutes on both sides until golden and crisp. Drain on kitchen paper.
8.
Stack the waffles, drizzle with syrup, and serve with the bacon and a garnish of raspberries.
