1 shallot
1 Tbsp butter
100 milliliters Red wine
salt
freshly ground peppers
Caraway (ground)
1 Tbsp apple cider vinegar
50 grams Crème fraiche
Beet Greens (for garnish)

Preparation steps

Peel beetroot and finely chop. Peel shallot and also chop finely. Sauté both in hot butter until translucent and deglaze with red wine and vinegar. Season with salt, pepper and cumin to taste, cover and gently simmer about 15 minutes. Remove lid, stir in crème fraîche and boil down vegetables until cooked. Remove from heat and let cool until lukewarm.

Spoon mixture into rings on plates. Garnsih with beetroot leaves and serve.
