- 13 ozs ready-rolled Shortcrust
- 1 egg (beaten)
Preparation steps
1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Roll out the sheet of pastry and use to line a pie dish.
3.
Heat the oil in a pan and cook the onion and garlic until slightly golden. Add the spinach and cook gently until wilted.
4.
Spoon the onion and spinach over the base of the pie, then scatter over the tomatoes, mozzarella and basil.
5.
Whisk together the eggs and cream, season and pour over the vegetables.
6.
Bake in the oven for around 35-40 minutes until the pastry is golden. Serve warm.
