1 clove garlic cloves (finely chopped)
4 shallots (sliced)
2 Zucchini (sliced)
4 firm Tomatoes (chopped)
6 black Olives (pitted & halved)
4 Salmon steak
Sea salt
freshly ground peppers
2 Tbsps lemon juice
1 Tbsp fennel seeds
2 Tbsps Basil

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Cut 4 pieces of greaseproof paper, measuring about 23cm|9" square. Drizzle with olive oil.
3.
Sprinkle over the garlic and shallots and arrange the vegetables, olives, basil and salmon on top. Season to taste with salt and pepper and drizzle with lemon juice.
4.
Sprinkle the salmon with fennel seeds, pressing in lightly. Drizzle with a little olive oil.
5.
Wrap up the paper to form parcels, folding the edges to seal. Place on a baking tray and cook for 10-15 minutes until the parcels are puffed and the salmon is cooked.
