- 8 cups Penne
- 2 garlic cloves (finely chopped)
- 3 Tbsps olive oil
- 1 Zucchini (diced or grated)
- ⅜ cup vegetable stock
- ⅔ cup Mascarpone
- 1 Tbsp fresh mint (chopped)
- 1 pinch lemon zest
- grated Cheese (e. g. Pecorino)
- mint (to garnish)
Preparation steps
1.
Cook the penne in boiling, salted water until al dente, 8-10 minutes.

Fry the garlic in hot oil. Add the courgette and cook for 2-3 minutes. Deglaze with the stock. Stir in the mascarpone, mint and lemon zest and season with salt and ground black pepper.
3.
Add the pasta to the sauce, mix well and arrange on plates. Sprinkle with cheese and serve garnished with mint.
