1 ¼ cups light brown sugar
¼ tsp salt
½ tsp ground ginger
1 pinch grated Nutmeg
2 cups coarsely chopped Pecan
2 large egg whites

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Mix together the sugar, salt, spices and pecans in a mixing bowl.

Drizzle in the egg whites and whisk until thick and well combined. You may not need all the egg white.

Drop teaspoons of the mixture onto the baking trays and flatten with the back of a spoon.
5.
Bake for 8-10 minutes, until the edges are lightly browned. Cool on the baking trays for 2 minutes, then place on a wire rack to cool completely. The biscuits will be soft, but will firm up as they cool.
