- 4 egg yolks
- 75 grams sugar
- 50 grams Rice flour
- 50 grams Tapioca flour
- 60 milliliters Coconut milk
Preparation steps

In a bowl set over a pot of hot (not boiling) water, whip egg yolks with sugar until foamy. Mix in both types of flour and the coconut milk. Mix well and divide between small ramekins (such as brioche pans).

In a wok, heat 1 liter (approximately 4 1/4 cups) water. Place a rack in the wok. Place ramekins on the rack, cover and steam 5-7 minutes. Remove, let cool briefly, invert puddings onto plates and serve.
