4 Chicken thigh (skinned, deboned and diced)
1 onion (peeled and finely sliced)
1 tsp ground Cumin
1 tsp ground cilantro
1 tsp paprika
3 ripe Tomatoes (thickly sliced)
1 cup chicken stock
2 Tbsps runny honey
½ cup Almond flour

Preparation steps

Heat the oil and cook the chicken briskly until golden, then reduce the heat and add the onion and spices and cook until the onion has softened.
2.
Stir in the tomatoes, stock and honey and simmer uncovered for 10-15 minutes until the sauce has reduced and the chicken has cooked.
3.
Stir through the almonds.
