18 ozs red Plum (pitted and halved or quartered)
2 Tbsps dairy-free margarine (melted)
½ cup coconut sugar
3 eggs
1 cup Coconut milk
1 tsp vanilla extract
¼ cup Corn starch
To serve

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease 4 individual, flan dishes.
2.
Place the plums skin side down in the baking dishes. Set aside.
3.
Whisk together the eggs and coconut palm sugar until combined.
4.
Add the coconut milk, vanilla and melted margarine and whisk until well blended.
5.
Gradually whisk in the cornflour until smooth.
6.
Pour the batter over the plums and bake for about 20 minutes until lightly browned and set in the centre.
7.
Cool for 5-10 minutes before serving with soya yoghurt.
