7 ozs young Spinach
2 Avocados (sliced)
1 small onion (thinly sliced)
salt

10 rashers lean Bacon
cup chopped Walnut
3 Tbsps olive oil
2 Tbsps white wine vinegar
3 tsps Dijon mustard

Preparation steps

1.
Divide the spinach, avocado and onion between 4 plates and season with salt and pepper.
2.
Fry the bacon in a dry frying pan until crisp and brown. Add the walnuts to the pan and toast until lightly browned.
3.
Spoon off most of the bacon fat from the pan, reduce the heat and add the olive oil until warmed through.
4.
Remove from the heat, add the vinegar and mustard and whisk until thickened.
5.
Chop the bacon and scatter over the salad with the walnuts. Drizzle with the warm dressing.
