- 2 Mozzarella
- 2 ripe Avocados
- 3 Tbsps lemon juice
- 3 scallions
- 1 red chili pepper
- 3 Tbsps white wine vinegar
- 2 tsps balsamic vinegar
- 1 tsp Mustard
- 1 pinch sugar
- salt
- freshly ground Black pepper
- 4 Tbsps olive oil
- 2 Tbsps chiffonade Basil
- Basil (to garnish)

Preparation steps

Slice the mozzarella.

Halve the avocado and remove the pit. Cut the avocado halves into thin wedges, peel and sprinkle immediately with lemon juice.
3.
Wash the chili, slit open lengthways, deseed and dice finely.
4.
Wash and trim the scallions. Chop the white and light green parts and snip the green tops into rings.
5.
Mix the vinegars with the mustard, sugar, salt and pepper and whisk in the oil. Then stir in the finely chopped basil leaves.
6.
Arrange the mozzarella and avocado on a large plate, overlapping the slices neatly. Scatter with chili and spring onions and sprinkle with the salad dressing. Serve garnished with basil leaves.
