Ingredients

For the cake
1 cup butter
1 cup superfine caster sugar
4 eggs
1.333 cups self-rising flour (sifted)
¼ cup cocoa powder
½ tsp Baking powder
For the filling
cup white chocolate (chopped)
½ cup unsalted butter
For the topping
cup plain Dark chocolate (60% cocoa solids, chopped)
2 Tbsps butter
To decorate
Berry (redcurrants, blackberries)
powdered sugar

Preparation steps

1.
For the cake: Preheat the oven to 190°C (170° fan) 375°F gas 5. Grease 2 x 20 cm | 8" deep loose-based cake tins and line the bases with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and fluffy.
3.
Add the eggs, one at a time, beating well to combine. Sift in the flour, cocoa and baking powder and gently stir until combined.

Spoon into the tins and bake for 45-50 minutes until springy to the touch. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the filling: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and allow to cool to room temperature.

Whisk the butter until soft and creamy, then gradually whisk in the melted chocolate until thick and light. Sandwich the cakes with the filling.
7.
For the topping: melt the chocolate and butter as before and allow to cool and thicken. Spoon over the top of the cake, allowing it to run down the sides. Leave to set. Decorate with berries and sift over a little icing sugar.
