1 cup Quark
½ cup honey
1 tsp vanilla extract
½ cup all-purpose flour (sifted)
½ tsp Baking powder
4 medium eggs (separated)
½ tsp cream of tartar
2 cups ripe Plum (pitted and halved)
2 Tbsps unsalted butter (softened)
2 Tbsps caster sugar (to garnish)

Preparation steps

1.
Combine the quark, honey, vanilla extract, flour, baking powder and egg yolks in a large mixing bowl. Beat well until smooth; 3 minutes.

Beat the egg whites with the cream of tartar in a separate, clean mixing bowl until stiffly peaked. Whisk one third into the quark mixture and then cut and fold that mixture into the rest of the egg whites.
3.
Grease four microwaveable mugs with the butter and fill with the souffle batter. Stud with the plum halves.
4.
Microwave on medium for 3 - 4 minutes, rotating the cups after 2 minutes, until the souffles have risen to the lips of the mugs.
5.
Carefully remove from the microwave and sprinkle with the sugar before serving.
